ドメーヌ・ジェラー・デュプレシス

クラシックなシャブリで知られるジェラー・デュプレシ(カーヴ・デュプレシ)だが、ジェラールの息子、リリアンが実質的に経営を受け継ぎ、さまざまな変化が見えている。
ドメーヌはACシャブリのほか、5つの1級畑(フルショーム、モンテ・ド・トネール、モンマン、ヴァイヨン、ヴォージロー)と1つの特級畑(レ・クロ)をもち、自社畑の規模はおよそ8ha。
2007年からリリアン主導でビオロジック栽培に移行し、2010年にとうとう認証を取得した。

1級畑と特級畑の醸造法は6ヶ月ステンレスタンク、6ヶ月小樽熟成、6ヶ月ステンレスタンクと変則的。
しかしこの醸造法が長期熟成に耐え得るシャブリを生み出し、実際、ドメーヌのセラーには古いバックヴィンテージのシャブリが販売用として残されている。

父ジェラールの時代はACシャブリもこの醸造法だったが、本来若飲みのACシャブリにはフレッシュさも残したいと考えたリリアンは、ステンレスタンクで発酵後、そのまま14ヶ月間、ステンレスタンクの中で熟成させることにした。
1級畑のうちヴォージローについても、樹齢の若い木から造られるため、ACシャブリと同じ醸造法をとっている。このワインはラベルに畑名を入れず、「シャブリ・プルミエ・クリュ・ジュヌ・ガルド」としてリリース。ジュヌ・ガルドとは若いうちに楽しむキュヴェという意味である。

ヴァンサン・ドーヴィサフランソワ・ラヴノーと似た路線のシャブリながら、だいぶお値打ち。
瓶詰め後もある程度熟成させるので、ドメーヌからの出荷がやや遅め。自分で寝かせる手間が省けるのもうれしい点だ。

The 2013 Chablis 1er Cru Montmains, which lies on the border with Foret, has an understated but very precise bouquet with flint and light green apple scents. There is an airy intensity to this Montmains. The palate is crisp and fresh with a keen line of acidity, precise and persistent in the mouth. There is also plenty of salinity toward the finish, completing what is an excellent Montmains, especially within the context of the vintage.

The 2012 Chablis 1er Cru Montmains comes from the last parcel in the climat before it becomes Forest. It has a subtle marine influence on the nose that the other premier crus do not exhibit at present, but with a couple minutes swirling, it also offers attractive wet pavement scents. The palate is lively on the entry with red apples, a touch of pear and apricot, well-judged acidity and a satisfying, long finish. Drink 2015-2024.

Tasted blind at the Burgundy 2011 horizontal tasting in Beaune. The 2011 Chablis Vaillons 1er Cru has a delineated, mineral-driven bouquet that is well defined with hints of candied orange peel in the background ? very focused and harmonious. The palate is clean and fresh with crisp acidity: touches of citrus peel and lime, good weight in the mouth with a cohesive but persistent finish. Excellent.

The 2013 Chablis Grand Cru les Clos, which comes from a single parcel of vines planted in 1964, has a fragrant bouquet: hints of dried honey intermingling with orange rind at first, segueing into more traditional mineral/granitic aromas. It's quite mercurial as I observed it over five minutes. The palate is well balanced, similar in style to the Fourchaume '13 in some ways with touches of orange rind and even dried mango toward the finish that then merges into quite a lively, spicy, ginger-tinged aftertaste that loiters for 45 seconds. Give this a couple of years in bottle then enjoy this Les Clos over the following decade.
